The purpose of COP9 is to set out requirements for red meat post slaughter activities and provide guidance on how to meet them. These requirements are set out in Regulations and Notices issued under the Animal Products Act 1999 (APA) to ensure red meat continues to be fit for its intended purpose following slaughter and dressing.
This Operational Code is effective from 1 May 2018 and replaces IS6 (Industry Standard 6) Processing of Edible Product. There is a transition period from 1 May 2018 to 1 January 2019 where operators can EITHER change over to COP9 or follow IS6. IS6 will be withdrawn on 1 Jan 2019.
